Hi my name is Greg Jackson Combs and this is my blog about all things Music and Food. I have spent the last fifteen years of my life working almost every position available in the Hospitality Industry as a Chef, Culinary Instructor, Bartender and Server, as well as a musician in the popular Chicago band Goodbyehome. Needless to say life has never been boring for me and I feel blessed to be a part of both Industries.

When I was sixteen years old my first job was cooking fresh pizzas and pastas at a local Italian joint in my hometown. I started answering phones and doing deliveries but in a strange series of events I ended up in the kitchen and haven't looked back since.

I am influenced by a variety of cooking styles as well as the seasons. I cook in mostly French, Italian & Japanese styles and fuse them effortlessly to provide a new American style of my own from sushi to Tapas, and pasta to the grill, I have a deep love and knowledge for all these elements.

I have been having a blast teaching sushi courses this summer and plan to continue expanding some of the courses I have been working to make them both fun and imformative for my Culinary students. I wanted to thank all the great students who have been getting inspired to make sushi. It’s not as hard as it seems! I’ve included some photos from my classes of some great sushi spreads, as well as some recipes of my own. Hopefully in the future I will be able to provide some informative videos. any ideas?
